Ingredients
  

  • 700 ml whole milk
  • 350 ml double cream
  • 2 tsp vanilla extract
  • 6 egg yolks
  • 150 g sugar
  • 1 tsp cinnamon
  • 1 tsp ground cloves
  • 2 tsp ginger powder
  • 1 tsp nutmeg
  • 60 ml Baileys / rum / brandy (optional, but recommended)

Instructions:

1. Mix the milk and the double cream into a saucepan, then bring them to a simmer (do not boil). Meanwhile, mix the egg yolks with the sugar and whip them until they turn into a brighter colour.

2. Grab a ladle and slowly add the hot milk into the egg yolk mixture by gradually scooping in a little at a time until the milk is fully combined with the egg yolk mixture. When the egg yolk mixture becomes the same colour as the milk, transfer everything in the initial saucepan (this is known as tempering the eggs). Add the vanilla extract.

3. Continue to stir on low heat for 10-15 minutes with a spatula to prevent the egg from curdling. Do not boil. You will slowly feel the mixture become creamier.

4. Once the mixture becomes thicker, transfer the whole eggnog into a clean bowl. Add cinnamon, ground cloves, ginger powder, nutmeg and Baileys (or the preferred beverage). Let it cool down. Alternatively, you can place it on an ice bath.

5. Strain through a fine mesh sieve. Store and serve as needed.

6. To finish, grab a glass and add extra whipped egg whites, whipped cream, alcohol or more cinnamon, depending on your preference and enjoy!
