Raspberry & White Chocolate Brownies
Prep time: 15 min / Bake time: 25 min / Total Time: 40 min
Were you looking for that quick, fudgy, juicy snack? Brownies are good, yes. But this brownie is just on another level.
Ingredients
- 170 g unsalted butter
- 150 g brown sugar
- 1 tsp vanilla extract
- 3 large eggs
- 100 g cocoa powder
- 100 g flour
- 1 pinch of salt
- 1 pack white chocolate chips (or chocolate bar)
- 150 g fresh raspberries
Instructions:
1. Preheat the oven at 180°C. Line a tray with baking paper and slightly grease it with butter. Set aside.
2. Grab a bowl (microwave safe), add the butter and brown sugar. Melt it together in the microwave for 30 seconds; mix well. Repeat the process until smooth. (aprox. 3 times)
3. Add the vanilla extract and eggs, mix well until combined.
4. Add the cocoa powder to the bowl and keep mixing until everything is smooth.
5. Add the flour gradually (to avoid having lumps, or if you’re brave add it all in one go) and a pinch of salt.
6. The best part! Fold in the white chocolate chips and raspberries gently and pour the whole mix into the tray. Optional: you can add chocolate chips or raspberries on top to make it look pretty.
7. Place the tray on the middle shelf into the pre-heated oven and bake to your preference of gooeyness: 20-30 minutes.
Tip: Bake time for brownies is a little tricky because every oven is different. We recommend checking the brownies around 20 minutes just to make sure you don’t overcook them (insert a knife in the middle of your brownie, if the mixture doesn’t stick to your knife, that brownie is definitely done!, if they still need a bit more time, that’s no problem, just put them back in the oven, but keep an eye on it, they cook fast!). Be mindful, it also cooks after you take it out of the oven.
8. Yes! It’s time to eat! Enjoy it with a glass of cold milk, ice cream or on its own.
How did we get here?
There simply is no summer without brownies. But saying that, how does it make you feel if I talk about a warm brownie and a cup of milk on a winter evening?
Brownies just work, every season, they get the job done. Something quick and easy to make? Brownie. Something tasty and full of flavour? Brownie. Feeling thirsty for some milk? Brownie!
Brownies were not a common dessert growing up. We had other goodies which will definitely end up on this blog and we promise they’re gonna be life changing treats. Most of the times when I bought brownies from stores, it was pretty much a forgettable experience and if you ever tried store bought brownies you know that it doesn’t hit you the same as a home-made one. Pretty much every store bought brownie tends to be dry, lacking in flavour and there’s nothing special about them, so you may end up wondering what’s all that hype about??
When we started making brownies at home, things started to improve and the journey towards happiness began aaaaand I started to understand the hype! But of course, now as I’m remembering it, the first recipe wasn’t perfect, but then we made the second and third and so on, until now….and it became irresistible.
Because it’s summer and everything and everywhere is very hot and sticky, we wanted to play in the kitchen and combine a few ingredients and as Cris adores white chocolate and I like any kind of berry, we decided to try and mix them in an easy and quick brownie recipe. And it’s not because “oh my God, let’s try something different” because this is a very well known recipe, but because it’s soooo easy to make that it will stick with you for the rest of your life.
