Italian Bruschetta with Mozzarella

Ingredients
  

  • 400 g tomatoes
  • 6-8 fresh basil leaves
  • 2 cloves garlic
  • 3 tbsp olive oil
  • 1 tsp salt
  • 125 g mozzarella
  • sourdough bread / ciabatta / baguette (or your preferred bread)

Instructions:

1. Grill or toast the bread slices until golden on both sides. Rub the garlic cloves onto the toasted bread.

2. Finely chop the tomatoes and basil leaves, then add them in a bowl and mix with olive oil.

3. Slice the mozzarella (or chop it if you prefer smaller bites) and place them on the toasted bread.

4. Place your slices of toast on a plate, add the tomato & basil mixture, season with salt to your preference and enjoy this fantastic, delizioso antipasto. Buon Appetito!
