Cherry Muffins

Ingredients
- 120 g butter (melted)
- 2 eggs
- 100 g sugar
- 9 tbsp yogurt (greek yogurt / kefir)
- 2 tbsp apple cider vinegar
- 1 tbsp baking powder
- pinch of salt
- 240 g all purpose flour
- 1 tsp vanilla extract
- 150 g fresh cherries
Instructions:
1. Preheat the oven to 190ºC. Prepare the muffin tray by lining with muffin liners. Set aside.
2. In a mixing bowl, whisk the melted butter and sugar until smooth. Add an egg at a time as you mix, followed by yogurt, apple cider vinegar and vanilla extract. Mix well.
3. Add the dry ingredients: flour, baking powder and a pinch of salt. Mix until it begins to come together. Do not overmix.
4. Make sure that your cherries are pitted! Fold the cherries into the batter and with a spatula mix until combined. Batter will thicken and help prevent the fruit from falling to the bottom while baking.
5. Scoop the batter into the muffin liners. You can use a tablespoon for each scoop to keep it consistent. Fill in about 3/4 of the way.
6. In the preheated oven, place the tray on the middle rack and bake for 5 minutes at 190ºC, then turn the temperature down to 180ºC and bake for an additional 15 minutes, or until golden brown. Remove from the oven and allow to cool for at least 15 minutes before eating. Enjoy!
