Brie, bacon & Caramelised Onion Sandwich

This is the remedy for those days when you need a good old classic sandwich – cheesy, crispy, sweet and salty. Every bite feels like Christmas.
Ingredients
- 2 red onions
- brie
- 8 bacon rashes
- 8 slices of bread
- 1 tbsp brown sugar
- 2 tbsp honey (alternative: maple syrup)
Instructions:
1. To make the caramelised onion, preheat a saucepan with a drizzle of oil, then thinly slice the onions. When the pan is hot, add the onions to the pan and cook them on low heat until softened. (approx. 15 min) Stir occasionally.
2. When the onions are soft and ready, add the brown sugar, honey and a pinch of salt to the pan. Stir well until combined.
3. In a hot frying pan, add the bacon rashes and fry until crispy.
4. Start assembling the sandwich. Add a layer of caramelised onion, thick slices of brie cheese and finally the crispy bacon. In the same frying pan, with a drizzle of oil, grill the bread until the cheese is melted between the layers. Tip: using a lid will fasten this process. But don’t forget to grill both sides of the bread to make it crispy. Enjoy!
